The Best 2-Ingredient Summer Cocktails
All recipes yield one serving unless otherwise specified. And since these cocktails only use 2 ingredients, you can easily substitute spirits in many of these recipes. So you feel free to do you and experiment!
1. 2-Ingredient Healthy Pina Colada
This is a great drink for the beach that won't make you feel bloated like your typical Pina Colada! Simply add the ingredients to a glass with ice, stir, and enjoy.
Ingredients:- 1.5 parts Coconut Rum
- 3 parts Pineapple Coconut Juice (like R W Knudsen Pineapple Coconut Juice)
2. Banana Coconut Colada
This cocktail is creamy, dreamy, and oh so delicious.
To make it, add ingredients to a blender with ice, blend until smooth, and you're done!
Ingredients:
- 2 ounces Coconut Rum
- 1 Medium Ripe Banana
3. Kombucha On A Beach
If you haven't tried Kombucha, it's a bubbly fermented tea that's filled with probiotics.
This one might sound strange, but trust me -- it's SO good. You can use any tropical flavored kombucha, but I like pineapple, mango, or a tropical blend (like Health-Ade Tropical Punch). And if you can't find pineapple rum, coconut rum or white rum would also do the trick.
Just add the ingredients to a glass with ice, stir, and you have a bubbly, tasty cocktail!
Ingredients:
- 1 part Pineapple Rum (like Stiggins' Fancy Pineapple)
- 3 parts Tropical Kombucha
4. Frozen Strawberry Daiquiri
Rum of any type and strawberry daiquiri mix are a match made in summer cocktail heaven! I personally opt for white rum, but coconut rum, dark rum, and spiced rum would work great too.
Add the rum and daiquiri mix to a blender with a cup of ice, blend it all up, and serve.
Ingredients:
- 1 part White Rum
- 3 parts Strawberry Daiquiri mix (like Master of Mixes Strawberry Daiquiri/Margarita Mixer)
5. Rum and Pineapple
Pineapple juice is one of the most versatile mixers, and it works so well with rum! This is one of the easiest tropical drinks you can make, and if you aren't a fan of rum, you can use vodka instead for an equally tasty drink.
Combine the ingredients in a glass with ice, stir, and enjoy!
Ingredients:- 1 part White Rum
- 2 parts Pineapple Juice
6. Watermelon Vodka Slush
This is one of my go-to poolside/beach drinks since it's both hydrating and refreshing! Add the watermelon (make sure it's seedless) and vodka to a blender and blend until smooth.
The recipe yields 4-6 servings and for a more frozen texture, just add a cup of ice while blending!
Ingredients:
- 1 cup Vodka
- 4 cups Seedless Chopped Watermelon
7. Frozen Vodka Limeade
This recipe is perfect for a crowd! Whip it up for a backyard BBQ or July 4th and it's guaranteed to get the party going.
Add the vodka and limeade to a blender with a tray of ice cubes, blend until smooth, and sip away. Yields 6 servings.
Ingredients:
- 1 cup Vodka
- 1 can (12 ounces) Frozen Limeade Concentrate
8. Blueberry Vodka Lemonade
Blueberry lemonade is always a welcome treat in the summer, and it's even better when vodka is added to the mix!
Add the vodka and lemonade to a highball glass with ice, stir, and serve.
Ingredients:- 1 part Blueberry Vodka (like Smirnoff Blueberry)
- 3 parts Lemonade
9. Peach Vodka Iced Tea
Growing up in the South, we always had peach iced tea in the summertime. You can use any iced tea you want for this recipe -- plain, peach, raspberry... it's all going to be delicious paired with peach vodka!
Add the ingredients to an iced filled glass, stir, and serve.
Ingredients:- 1 part Peach Vodka (like Smirnoff Peach)
- 3 parts Sweetened Iced Tea
10. Easiest Classic Margarita
This recipe might be blasphemy for margarita purists, but in a pinch it does the trick and your friends won't know the difference! The secret ingredient is Rose's Sweetened Lime Juice, which acts as both the citrus and sweetener.
Add the ingredients to a shaker with ice, shake well, then pour into an ice-filled, salt-rimmed glass.
Ingredients:- 2 ounces Tequila
- 1 1/2 ounces Rose's Sweetened Lime Juice
11. Frozen Strawberry Margarita
Another one that isn't for margarita purists, but is still incredibly tasty! Feel free to use any flavor of sorbet, but strawberry is my personal favorite. You can also add a few squirts of lime juice and a salt or sugar rim to elevate it a bit.
Add the ingredients to a blender, blend until smooth, and pour into a glass rimmed with salt or sugar! Yields 4 servings.
Ingredients:- 8 ounces Tequila
- 1 pint (16 ounces) Strawberry Sorbet
12. 2-Ingredient Paloma
I love grapefruit juice and soda in the summertime since it's so tart and bright. This simplified version of a Paloma takes seconds to make and is always a crowd pleaser!
Add the tequila to a glass with ice, then pour over the grapefruit soda. If you have a lime wedge sitting around, squeeze it over the drink for an extra citrusy kick.
Ingredients:- 1 part Tequila
- 2 parts Grapefruit Soda
13. 2-Ingredient Tom Collins
A Tom Collins -- one of the most refreshing gin drinks of all time -- is made with gin, club soda, lemon juice, and simple syrup. This simplified version just uses lemon soda to take care of the citrus, sweetener, and carbonated components of the drink.
Pour the ingredients into a glass with ice, lightly stir, and serve.
Ingredients:- 1 part Gin
- 2 parts Lemon Soda (like Sanpellegrino Limonata)
14. Elderflower Gin and Tonic
This is such a summery version of a G&T! Elderflower is one of the best liqueurs for summer since it's light, sweet, and floral.
Add the ingredients to a glass with ice, stir, and serve!

15. Cucumber Gin and Tonic
Here's another fun riff on a G&T that's perfect for summer! I mean really -- what's a more refreshing combination than gin and cucumber?
Just like the above recipe, add ingredients to a glass with ice, stir, and you're done.
Ingredients:
- 1 part Gin
- 3 parts Cucumber Tonic (like Fever Tree Cucumber Tonic)
16. 2-Ingredient Gimlet
This is a classic cocktail that dates back to the Jazz Age and has stood the test of time! It's more potent than most other drinks on this list, but still super refreshing. I mean it's gin and lime juice, so how could it not be perfect for summer!?
To make it, stir the ingredients together in a mixing glass with ice, then strain into a chilled martini or coupe glass.
Ingredients:- 2 parts Gin
- 1 part Lime Cordial or Sweetened Lime Juice
17. Whiskey Lemonade
Whiskey and lemonade is a pairing you'll see a lot in the South, especially in the summertime. You can use your whiskey of choice, but I find it's best with bourbon or Jack Daniel's.
Stir the ingredients together in a glass with ice, then serve.
Ingredients:- 1 part Whiskey
- 2 parts Lemonade
18. Bourbon Sweet Tea
Yet another recipe inspired by living though many southern summers! You can buy pre-made sweet tea (like Milo's) or make a homemade batch with your preferred tea to sugar ratio. Either way, it's a perfect cocktail for sitting on a porch swing or after mowing the lawn.
Pour the ingredients over ice, stir well, and enjoy.
Ingredients:
- 1 part Bourbon
- 4 parts Sweet Tea
19. Orange Bourbon Slush
For this recipe you can get away with using any whiskey you have on hand other than Scotch, but I think bourbon is best!
Add the bourbon and the frozen orange concentrate to a punch bowl, stir it all up, and then pop it in the freezer for at least 8 hours. Then when you're ready to serve, stir the mixture until it's your desired consistency (this usually takes a minute or less). Yield is 6 servings.
Ingredients:
- 1 cup Bourbon
- 1 can (12 ounces) Frozen Orange Concentrate
20. 2-Ingredient Sangria
Sangria is so wonderful in the summer and doesn't need to be overly complicated or fancy. This recipe proves all you really need is a good juice blend and a bottle of bubbly!
You can use your favorite tropical fruit juice blend, but I personally like Dole's Pineapple Peach Mango juice. As for the wine, I recommend using a dry sparkling rosé, but you could also use your favorite sparkling wine or a simple dry white wine (like a Pinot Grigio).
To make it, simply add the ingredients to a pitcher and you're done! Serve immediately if using sparkling wine, and feel free to throw in any chopped fruit that you have on hand. Yields 6-8 servings.
Ingredients:- 3 cups Tropical Fruit Juice blend
- 1 bottle Sparkling Wine or White Wine
21. Strawberry Frosé
To me, frosé (aka frozen rosé) is the quintessential summertime wine cocktail. I've never met anyone who didn't LOVE this recipe, and it couldn't be easier to make.
Feel free to use any rosé you like! It definitely doesn't need to be a nice bottle, and you can do a sweet or dry rosé depending on how sweet you like your drinks.
Make it by blending frozen strawberries and enough rosé to cover the strawberries in a blender until smooth, then pour in the rest of the rosé and stir well. Yields 4 servings.

Ingredients:- 3 cups Frozen Strawberries
- 1 bottle Rosé
22. Raspberry Bellini
This is a fun riff on a Bellini -- a drink made with peach purée and sparkling wine -- that leverages one of my favorite summertime fruits! The raspberry purée pairs beautifully with sparkling wine and results in a cocktail that's subtly sweet, tart, and refreshing.
You can buy raspberry purée at the store or make your own with fresh raspberries, a bit of water, and sugar to taste. For the wine, you can just use your favorite sparkling wine -- sparkling rosé, Prosecco, or Cava will all work great.
When ready to serve, pour roughly two tablespoons of the purée into a flute and then top with sparkling wine. Yields 4 servings and is perfect for a summer brunch!
Ingredients:- 1/2 cup Raspberry Purée
- 1 bottle Sparkling Wine
23. St. Germain and Champagne
As we've already covered, elderflower is a fantastic ingredient for cocktails in the summertime since it's lightly sweet, floral, and filled with tropical fruit flavors.
While Champagne is typically used in this cocktail, any sparkling wine will work just as well!
Add the St. Germain elderflower liqueur to a flute, then top with sparkling wine and serve.
Ingredients:- 1 part St. Germain Elderflower Liqueur
- 4 parts Sparkling Wine
